I'll freely admit it...I'm a dessert-a-holic. I love sweets, and sweets made with fruit are a particular favorite. I'll also freely admit it...I can be a lazy cook. If there's a way to make what I want without a lot of muss and fuss, I'll find it. Enter...the Crock-Pot.
While most of us have already learned the value of having a crock-pot for easy meals, not as many are aware of the vast array of recipes for desserts that use this valuable tool! My question is WHY? Well, today I'm going to give you a fantastic reason to bring that crock-pot out...a homemade apple dessert that will knock your socks off!!
This recipe doesn't take a lot of ingredients, but MAN, does it pack a flavorful punch! And the beauty of it? It's what I call a "dump" recipe...you dump your ingredients in, put the lid on, set the timer, and let it do ALL the work for you! What could be simpler than that?
The real beauty of this recipe? You can use almost ANY type of fruit filling to make it, so if you prefer cherry, peach, or something else, GO FOR IT!! I'm also adding a couple of options for variations...they'll be at the end of the recipe.
Crock-Pot Apple Dump Cake
1 box yellow cake mix (I prefer Duncan Hines), 15.25oz
2 cans (21oz each) Apple Pie filling
1 stick melted butter, unsalted (not margarine, it doesn't taste as good)
1/2 cup caramel sundae syrup (optional, but really tasty...omit if you're watching your sugar)
Directions
Spray the interior of your crock-pot with non-stick spray, being sure to coat the entire bottom and sides.
Dump both cans of pie filling into the crock-pot, and spread evenly across the bottom (told you this was a "dump" cake). Pour the caramel syrup over the filling and spread around (omit entirely if you're watching your sugar).
In a separate bowl, mix the dry cake mix with the melted butter (it will be somewhat stiff). Don't add any of the ingredients for making the cake...you don't need them. Just the cake mix and butter will do. Sprinkle the cake/butter mixture evenly over the top of the pie filling.
Now...here's the trick - grab 3-4 paper towels (don't separate them), and lay them OVER the top of the crock-pot BEFORE putting the lid on. This will prevent all of the moisture that accumulates from making the dump cake a soggy mess!
Put the lid over the paper towels, set the crock-pot on High, and let it run for 2 hours.
Once done, it's ready to serve as is...or you can place under your broiler for 3-5 minutes to "crisp" up the topping a bit (easy to do if your crock-pot has a removeable crock...if not, spoon the cake into individual oven-safe serving bowls, and place under broiler for 2-3 minutes). Top with vanilla ice cream or whipped topping and serve!!!
NOTE - Variations
1) To make this more of a "crisp" (as opposed to cake), simply stir 3/4 cup quick oats into the cake/butter mixture, then continue as directed, broiling 3-5 minutes after the cooking time.
2) To make this using fresh fruit: wash, peel, and thinly slice 2 medium apples. Place in bowl. Add 1/2 cup sugar and 1 tsp ground cinnamon to apples; stir to mix well. Allow to sit for about 20 minutes (lets the natural juice start to flow), then place in crock-pot and proceed as normal. If you prefer a different fruit, use the sugar and any appropriate spice (cinnamon for peaches...nothing for blueberries...vanilla for bananas), then place in crock-pot and proceed as normal.
